Simple things, done well: this is our way of cooking. We close tortelli by hand, knead gnocchetti and prepare codfish from stockfish. The quality of the main ingredient is the centre of the dish, with a few spices chosen to enhance without covering and that handmade preparation that gives the food a whole other flavour. As children we spent our summers at our grandparents', living like they used to. We milked the cows while grandma cooked what grandpa brought her. That's how we learnt about real genuine flavours, mountain milk, meat cured in the pastures. That is why in our dishes you will find Lessinia, local raw materials that we still work according to tradition. And alpine gnocchi rigorously kneaded and lowered by hand!

When you've been hanging around your parents' kitchen since you were born, it's only natural to end up behind the cooker with them, isn't it? I studied at the Hotelier Institute, but there was little to add: cooking was in my blood. And now I am also passing it on to my two children, who come to keep me company on Sunday mornings while I prepare the lunch service. What can I say: the kitchen is really where I belong.
